Slow Cooker 5-Ingredient Amish Meatloaf Potatoes

Ingredients

  • 1½ lbs (680 g) ground beef
  • 1 box (6 oz / ~170 g) stuffing mix (like herb or chicken flavor)
  • 1 cup milk
  • 2 eggs
  • 4–5 medium potatoes, peeled and sliced

🔪 Instructions

  1. Mix the meatloaf
    In a large bowl, combine ground beef, stuffing mix, milk, and eggs. Mix until just combined (don’t overwork it).
  2. Prep the slow cooker
    Lightly grease your slow cooker or line with parchment/foil for easier cleanup.
  3. Add potatoes
    Spread sliced potatoes evenly across the bottom.
  4. Shape the meatloaf
    Form the meat mixture into a loaf and place it on top of the potatoes.
  5. Cook
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
      Meatloaf should be fully cooked (internal temp ~160°F / 71°C), and potatoes tender.
  6. Serve
    Let rest for 5–10 minutes before slicing. Serve meatloaf with the potatoes underneath.

💡 Optional Add-Ons (if you want more flavor)

  • Spread ketchup or BBQ sauce on top during the last hour
  • Add sliced onions or carrots with the potatoes
  • Sprinkle shredded cheese over potatoes near the end

🍽️ Tips

  • Use lean ground beef to avoid excess grease
  • If there’s too much liquid, remove the lid for the last 30 minutes
  • You can swap potatoes for sweet potatoes for a different twist
