Ingredients
- 1½ lbs (680 g) ground beef
- 1 box (6 oz / ~170 g) stuffing mix (like herb or chicken flavor)
- 1 cup milk
- 2 eggs
- 4–5 medium potatoes, peeled and sliced
🔪 Instructions
- Mix the meatloaf
In a large bowl, combine ground beef, stuffing mix, milk, and eggs. Mix until just combined (don’t overwork it). - Prep the slow cooker
Lightly grease your slow cooker or line with parchment/foil for easier cleanup. - Add potatoes
Spread sliced potatoes evenly across the bottom. - Shape the meatloaf
Form the meat mixture into a loaf and place it on top of the potatoes. - Cook
- LOW: 6–7 hours
- HIGH: 3–4 hours
Meatloaf should be fully cooked (internal temp ~160°F / 71°C), and potatoes tender.
- Serve
Let rest for 5–10 minutes before slicing. Serve meatloaf with the potatoes underneath.
💡 Optional Add-Ons (if you want more flavor)
- Spread ketchup or BBQ sauce on top during the last hour
- Add sliced onions or carrots with the potatoes
- Sprinkle shredded cheese over potatoes near the end
🍽️ Tips
- Use lean ground beef to avoid excess grease
- If there’s too much liquid, remove the lid for the last 30 minutes
- You can swap potatoes for sweet potatoes for a different twist
