Ingredients
- 4 bone-in or boneless pork chops (about 1 inch thick)
- 3 tbsp brown sugar
- 1 tsp salt
- ½ tsp black pepper
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp onion powder
- 1 tbsp olive oil
- 2 tbsp butter
- 3 cloves garlic, minced
- 1 tbsp soy sauce
- 1 tbsp Dijon mustard (optional, for depth)
- ½ cup (120 ml) chicken broth
- 1 tsp fresh thyme (or ½ tsp dried)
👩🍳 Instructions
1. Season the pork chops
- Pat pork chops dry with paper towels.
- In a small bowl, mix brown sugar, salt, pepper, paprika, garlic powder, and onion powder.
- Rub the mixture evenly over both sides of the chops.
2. Sear the chops
- Heat olive oil in a large skillet over medium-high heat.
- Add pork chops and sear for 3–4 minutes per side until nicely browned.
- Remove from skillet and set aside.
3. Make the sauce
- Reduce heat to medium.
- Add butter and minced garlic; sauté for about 30 seconds until fragrant.
- Stir in chicken broth, soy sauce, and Dijon mustard.
- Scrape up the browned bits from the pan (this adds tons of flavor).
4. Simmer
- Return pork chops to the skillet.
- Spoon sauce over them and sprinkle in thyme.
- Cover and simmer for 5–7 minutes, or until pork reaches 145°F (63°C) internally.
5. Finish & serve
- Let rest for a couple of minutes.
- Spoon extra sauce over the top before serving.

- Thicker chops = juicier results.
