Pecan Dandy Do’s

Ingredients

For the crust:

  • 1 cup (225g) unsalted butter, softened
  • ½ cup (100g) granulated sugar
  • 2 cups (250g) all-purpose flour
  • ¼ tsp salt

For the pecan topping:

  • 3 large eggs
  • 1½ cups (300g) brown sugar (light or dark)
  • 1 tsp vanilla extract
  • ¼ cup (60ml) melted butter
  • ¼ cup (60ml) corn syrup (or honey as substitute)
  • ¼ tsp salt
  • 2 cups (200g) chopped pecans

👩‍🍳 Instructions

1. Prepare the crust

  1. Preheat oven to 350°F (175°C).
  2. Cream the butter and sugar until light and fluffy.
  3. Mix in flour and salt until a soft dough forms.
  4. Press evenly into a greased or parchment-lined 9×13-inch pan.
  5. Bake for 15–18 minutes, until lightly golden.

2. Make the topping

  1. In a bowl, whisk eggs and brown sugar until smooth.
  2. Stir in vanilla, melted butter, corn syrup, and salt.
  3. Fold in chopped pecans.

3. Assemble & bake

  1. Pour the pecan mixture over the hot crust.
  2. Return to oven and bake for 25–30 minutes, until set and golden.

4. Cool & serve

  • Let cool completely before cutting into squares or bars.
  • Optional: dust lightly with powdered sugar.

💡 Tips

  • Toast the pecans beforehand for deeper flavor.
  • Chill before slicing for cleaner cuts.
  • These keep well for several days in an airtight container.
