Ingredients
For the crust:
- 1 cup (225g) unsalted butter, softened
- ½ cup (100g) granulated sugar
- 2 cups (250g) all-purpose flour
- ¼ tsp salt
For the pecan topping:
- 3 large eggs
- 1½ cups (300g) brown sugar (light or dark)
- 1 tsp vanilla extract
- ¼ cup (60ml) melted butter
- ¼ cup (60ml) corn syrup (or honey as substitute)
- ¼ tsp salt
- 2 cups (200g) chopped pecans
👩🍳 Instructions
1. Prepare the crust
- Preheat oven to 350°F (175°C).
- Cream the butter and sugar until light and fluffy.
- Mix in flour and salt until a soft dough forms.
- Press evenly into a greased or parchment-lined 9×13-inch pan.
- Bake for 15–18 minutes, until lightly golden.
2. Make the topping
- In a bowl, whisk eggs and brown sugar until smooth.
- Stir in vanilla, melted butter, corn syrup, and salt.
- Fold in chopped pecans.
3. Assemble & bake
- Pour the pecan mixture over the hot crust.
- Return to oven and bake for 25–30 minutes, until set and golden.
4. Cool & serve
- Let cool completely before cutting into squares or bars.
- Optional: dust lightly with powdered sugar.
