Brown Sugar Pork Chops: Sweet, Savory, and Delicious

Ingredients

  • 4 bone-in or boneless pork chops (about 1 inch thick)
  • 3 tbsp brown sugar
  • 1 tsp salt
  • ½ tsp black pepper
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 3 cloves garlic, minced
  • 1 tbsp soy sauce
  • 1 tbsp Dijon mustard (optional, for depth)
  • ½ cup (120 ml) chicken broth
  • 1 tsp fresh thyme (or ½ tsp dried)

👩‍🍳 Instructions

1. Season the pork chops

  • Pat pork chops dry with paper towels.
  • In a small bowl, mix brown sugar, salt, pepper, paprika, garlic powder, and onion powder.
  • Rub the mixture evenly over both sides of the chops.

2. Sear the chops

  • Heat olive oil in a large skillet over medium-high heat.
  • Add pork chops and sear for 3–4 minutes per side until nicely browned.
  • Remove from skillet and set aside.

3. Make the sauce

  • Reduce heat to medium.
  • Add butter and minced garlic; sauté for about 30 seconds until fragrant.
  • Stir in chicken broth, soy sauce, and Dijon mustard.
  • Scrape up the browned bits from the pan (this adds tons of flavor).

4. Simmer

  • Return pork chops to the skillet.
  • Spoon sauce over them and sprinkle in thyme.
  • Cover and simmer for 5–7 minutes, or until pork reaches 145°F (63°C) internally.

5. Finish & serve

  • Let rest for a couple of minutes.
  • Spoon extra sauce over the top before serving.

  • Thicker chops = juicier results.
  • Don’t skip resting—it keeps the meat tender.
