Weight Watchers Zero Point Cucumber Bang Salad

Ingredients:

  • 2 large cucumbers (thinly sliced)
  • 1/4 red onion (very thinly sliced)
  • 1/2 cup cherry tomatoes (halved)
  • 1–2 cloves garlic (minced)
  • 2 tbsp rice vinegar
  • 1 tbsp soy sauce (low sodium preferred)
  • 1–2 tsp chili flakes or a dash of hot sauce (adjust to taste)
  • Juice of 1 lime
  • 1 tsp grated fresh ginger (optional but recommended)
  • Salt & pepper to taste
  • Fresh herbs (like cilantro or parsley), chopped

  1. Prep the cucumbers: Slice them thinly. For extra crunch, you can lightly salt them and let sit for 10 minutes, then drain excess water.
  2. Mix the dressing: In a bowl, combine rice vinegar, soy sauce, lime juice, garlic, ginger, and chili flakes.
  3. Combine: Toss cucumbers, red onion, and tomatoes with the dressing.
  4. Chill: Let it sit in the fridge for 15–30 minutes so flavors meld.
  5. Finish: Add fresh herbs, adjust seasoning, and serve cold.
