Low Carb 3-Ingredient Cheese Olive Bombs

Ingredients (Makes ~12 bombs)

  • 1 cup shredded mozzarella cheese
  • ½ cup almond flour
  • 12 green olives (pitted)

Instructions

  1. Preheat oven
    Set your oven to 200°C (400°F) and line a baking sheet with parchment paper.
  2. Make the dough
    In a bowl, mix the shredded mozzarella and almond flour.
    Microwave for about 30–45 seconds until the cheese softens, then stir until it forms a dough-like consistency.
  3. Wrap the olives
    Take a small portion of dough, flatten it, and wrap it around each olive. Roll into a ball to seal.
  4. Bake
    Place the balls on the baking sheet and bake for 10–12 minutes, or until golden brown.
  5. Cool & serve
    Let them cool slightly—they firm up as they sit. Serve warm for best texture.
