Easy Pineapple Bake: A Warm, Custardy, Sweet and Tangy Delight

Ingredients:

  • 1 can (about 565 g / 20 oz) crushed pineapple (with juice)
  • 2 large eggs
  • 3/4 cup granulated sugar
  • 2 tbsp all-purpose flour
  • 1/4 cup melted butter
  • 1 tsp vanilla extract
  • 1/2 tsp salt
  • 2 slices white bread, cubed (or 1 cup soft bread cubes)

👩‍🍳 Instructions:

  1. Preheat oven to 180°C (350°F). Grease a small baking dish (about 20×20 cm / 8×8 inch).
  2. In a mixing bowl, whisk together:
    • Eggs
    • Sugar
    • Melted butter
    • Vanilla extract
    • Salt
  3. Stir in the flour until smooth.
  4. Add the crushed pineapple (with its juice) and mix well.
  5. Fold in the bread cubes until evenly coated.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 40–45 minutes, or until the top is golden and the center is set (slightly custardy).

🍽️ To Serve:

  • Serve warm as a dessert or even a sweet side dish
  • Optional: add a scoop of vanilla ice cream or whipped cream

  • For extra richness, sprinkle a little brown sugar on top before baking
  • You can add shredded coconut for a tropical twist
  • Slight jiggle in the center = perfect custardy texture
