Cheesy Roast Beef

Ingredients

  • 1 kg (2–2.5 lb) beef roast (chuck, sirloin, or ribeye)
  • 2 tbsp olive oil
  • 4 cloves garlic (minced)
  • 1 onion (sliced)
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp paprika
  • 1 tsp dried thyme (or rosemary)

🧄 For the sauce

  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk (warm)
  • 1 cup beef broth
  • 1 ½ cups shredded cheese (cheddar, mozzarella, or mix)
  • ½ tsp mustard (optional, for depth)
  • Salt & pepper to taste

🔥 Instructions

1. Season & sear the beef

  1. Preheat oven to 180°C (350°F).
  2. Rub the beef with olive oil, garlic, salt, pepper, paprika, and herbs.
  3. Heat a pan and sear the beef on all sides until browned (about 3–4 minutes per side).

2. Roast the beef

  1. Place sliced onions in a roasting dish.
  2. Put the seared beef on top.
  3. Add a little beef broth (about ½ cup) to keep it juicy.
  4. Cover with foil and roast:
    • Medium: ~60–75 minutes
    • Well-done: ~80–90 minutes

Let it rest 10 minutes after cooking.

3. Make the cheesy sauce

  1. Melt butter in a pan.
  2. Stir in flour and cook 1–2 minutes (forms a roux).
  3. Slowly whisk in milk and beef broth.
  4. Cook until thickened.
  5. Add cheese and stir until melted and smooth.
  6. Season with salt, pepper, and optional mustard.

4. Combine & bake

  1. Slice the roast beef.
  2. Place slices in a baking dish.
  3. Pour cheesy sauce over the meat.
  4. Sprinkle extra cheese on top.
  5. Bake uncovered at 200°C (400°F) for 10–15 minutes until bubbly and golden.

  • Use leftover roast beef for a quicker version.
  • Add mushrooms or caramelized onions for extra flavor.
