Ingredients
- 1 kg (2–2.5 lb) beef roast (chuck, sirloin, or ribeye)
- 2 tbsp olive oil
- 4 cloves garlic (minced)
- 1 onion (sliced)
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp paprika
- 1 tsp dried thyme (or rosemary)
🧄 For the sauce
- 2 tbsp butter
- 2 tbsp flour
- 2 cups milk (warm)
- 1 cup beef broth
- 1 ½ cups shredded cheese (cheddar, mozzarella, or mix)
- ½ tsp mustard (optional, for depth)
- Salt & pepper to taste
🔥 Instructions
1. Season & sear the beef
- Preheat oven to 180°C (350°F).
- Rub the beef with olive oil, garlic, salt, pepper, paprika, and herbs.
- Heat a pan and sear the beef on all sides until browned (about 3–4 minutes per side).
2. Roast the beef
- Place sliced onions in a roasting dish.
- Put the seared beef on top.
- Add a little beef broth (about ½ cup) to keep it juicy.
- Cover with foil and roast:
- Medium: ~60–75 minutes
- Well-done: ~80–90 minutes
Let it rest 10 minutes after cooking.
3. Make the cheesy sauce
- Melt butter in a pan.
- Stir in flour and cook 1–2 minutes (forms a roux).
- Slowly whisk in milk and beef broth.
- Cook until thickened.
- Add cheese and stir until melted and smooth.
- Season with salt, pepper, and optional mustard.
4. Combine & bake
- Slice the roast beef.
- Place slices in a baking dish.
- Pour cheesy sauce over the meat.
- Sprinkle extra cheese on top.
- Bake uncovered at 200°C (400°F) for 10–15 minutes until bubbly and golden.
