- 12 green olives (pitted)

- Preheat oven
Set your oven to 200°C (400°F) and line a baking sheet with parchment paper. - Make the dough
In a bowl, mix the shredded mozzarella and almond flour.
Microwave for about 30–45 seconds until the cheese softens, then stir until it forms a dough-like consistency. - Wrap the olives
Take a small portion of dough, flatten it, and wrap it around each olive. Roll into a ball to seal. - Bake
Place the balls on the baking sheet and bake for 10–12 minutes, or until golden brown. - Cool & serve
Let them cool slightly—they firm up as they sit. Serve warm for best texture.
