Turkish bread

Ingredients

  • 500 g all-purpose flour
  • 1 tbsp sugar
  • 1 tsp salt
  • 1 tbsp instant yeast
  • 300 ml warm water
  • 2 tbsp olive oil
  • 1 egg yolk (for topping)
  • 2 tbsp yogurt (for topping)
  • Sesame seeds or nigella seeds (optional)

👩‍🍳 Instructions

1. Activate & mix

In a bowl, combine:

  • Warm water
  • Sugar
  • Yeast

Let it sit for about 5–10 minutes until foamy.

2. Make the dough

Add:

  • Flour
  • Salt
  • Olive oil

Mix and knead for about 8–10 minutes until smooth and soft.

3. First rise

  • Cover the dough
  • Let it rise in a warm place for 1 hour (until doubled)

4. Shape the bread

  • Transfer dough to a baking tray lined with paper
  • Flatten into an oval or round shape (about 2–3 cm thick)
  • Use your fingers to create the classic grid pattern on top

5. Second rise

Let it rest for 20–30 minutes

6. Prepare topping

Mix:

  • Egg yolk
  • Yogurt

Brush gently over the dough, then sprinkle seeds.

7. Bake

  • Preheat oven to 220°C
  • Bake for 12–15 minutes until golden brown

🔥 Tips

  • Put a small tray of water in the oven for steam → softer crust
  • Best eaten warm
  • Perfect with hummus, grilled meat, or cheese
