Creamy Cucumber Salad

Ingredients:

4 large Cucumbers

1 medium Sweet Onion

1 cup Mayonnaise

1/2 cup White Sugar

1/4 cup White Vinegar

Salt and Pepper to taste

Directions:

Wash, peel and thinly slice 4 large cucumbers. A mandoline is recommended for uniform slices.

Thinly slice 1 medium sweet onion.

Combine the sliced cucumbers and onions in a ceramic, glass, or plastic bowl with a lid.

In a small bowl, blend mayonnaise, sugar, and vinegar until smooth.

Mix the mayonnaise blend with the cucumber and onion slices thoroughly.

Season with salt and pepper to your liking.

Secure the bowl with its lid and give it a gentle shake.

Refrigerate to marinate for at least 6 hours, though overnight is preferred.

Keep any leftovers refrigerated.
