Cowbow stew

Ingredients

  • 500 g ground beef
  • 200 g smoked sausage (sliced)
  • 1 medium onion (chopped)
  • 2–3 cloves garlic (minced)
  • 2 medium potatoes (diced)
  • 1 can (400 g) diced tomatoes
  • 1 can (400 g) baked beans (or kidney beans)
  • 1 cup corn (fresh, frozen, or canned)
  • 2 cups beef broth
  • 1 tsp paprika
  • 1 tsp chili powder (optional, for heat)
  • Salt and black pepper to taste
  • 1 tbsp oil

Instructions

  1. Brown the meat
    Heat oil in a large pot over medium heat. Add ground beef and cook until browned. Drain excess fat if needed.
  2. Add sausage & aromatics
    Stir in sliced sausage, onion, and garlic. Cook for 3–4 minutes until fragrant.
  3. Build the stew
    Add potatoes, diced tomatoes (with juice), beans, corn, and beef broth.
  4. Season
    Stir in paprika, chili powder, salt, and pepper.
  5. Simmer
    Bring to a boil, then reduce heat and let it simmer for 25–30 minutes, until potatoes are tender.
  6. Adjust & serve
    Taste and adjust seasoning. Serve hot.

Optional Add-Ons

  • A pinch of cumin for extra depth
  • Chopped fresh parsley or cilantro on top
  • A dash of hot sauce if you like spice
  • Serve with crusty bread or rice
