Ingredients
- 1 medium head cauliflower, cut into small florets
- 6 slices bacon, cooked and crumbled
- 1/2 cup red onion, finely chopped
- 1/2 cup shredded cheddar cheese
- 1/4 cup sunflower seeds
- 1/4 cup chopped parsley or green onions
Dressing
- 3/4 cup mayonnaise
- 2 tbsp sour cream
- 1 tbsp apple cider vinegar
- 1 tsp Dijon mustard
- 1 tsp sugar or honey
- Salt and black pepper to taste
Instructions
- Wash and dry the cauliflower florets well.
- In a large bowl, combine cauliflower, bacon, onion, cheese, sunflower seeds, and parsley.
- In a separate bowl, whisk together mayonnaise, sour cream, vinegar, mustard, sugar, salt, and pepper.
- Pour dressing over the salad and toss until evenly coated.
- Refrigerate for at least 30 minutes before serving for best flavor.

- Diced avocado
- Chopped boiled eggs
- Raisins or dried cranberries
- Broccoli florets
- Jalapeños for heat
