Cauliflower Salad

Ingredients

  • 1 medium head cauliflower, cut into small florets
  • 6 slices bacon, cooked and crumbled
  • 1/2 cup red onion, finely chopped
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup sunflower seeds
  • 1/4 cup chopped parsley or green onions

Dressing

  • 3/4 cup mayonnaise
  • 2 tbsp sour cream
  • 1 tbsp apple cider vinegar
  • 1 tsp Dijon mustard
  • 1 tsp sugar or honey
  • Salt and black pepper to taste

Instructions

  1. Wash and dry the cauliflower florets well.
  2. In a large bowl, combine cauliflower, bacon, onion, cheese, sunflower seeds, and parsley.
  3. In a separate bowl, whisk together mayonnaise, sour cream, vinegar, mustard, sugar, salt, and pepper.
  4. Pour dressing over the salad and toss until evenly coated.
  5. Refrigerate for at least 30 minutes before serving for best flavor.

Optional Add-Ins

  • Diced avocado
  • Chopped boiled eggs
  • Raisins or dried cranberries
  • Broccoli florets
  • Jalapeños for heat

This salad is crisp, creamy, and great for BBQs, potlucks, or meal prep.
