Ingredients

  • 3–4 chicken breasts
  • 1 cup shredded Jack cheese (Monterey Jack or Pepper Jack)
  • 2 tablespoons olive oil

  • 1 cup low-sodium chicken broth
  • 1 tablespoon butter
  • 1 small onion, thinly sliced
  • 1 bell pepper, thinly sliced (optional but recommended)
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • Salt & black pepper, to taste
  • Fresh parsley for garnish

1. Prepare the Chicken

  • Pat the chicken breasts dry with paper towels — this helps them brown beautifully.
  • Season both sides generously with salt, pepper, paprika, and onion powder.

2. Sear the Chicken

  • Heat 2 tbsp olive oil in a large skillet over medium-high heat.
  • Add the chicken and sear for 5–6 minutes per side, until golden brown.
