Texas Roadhouse Smothered Chicken with Jack Cheese

Ingredients (Serves 4)
- 4 boneless, skinless chicken breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- ½ teaspoon salt
- ½ teaspoon black pepper
- 1 cup fresh mushrooms, sliced
- 1 small onion, thinly sliced
- 1 tablespoon butter
- ½ cup chicken broth
- 1 cup shredded Monterey Jack cheese
- 2 tablespoons fresh parsley, chopped (optional, for garnish)
Instructions
1. Prepare the Chicken
- Preheat your oven to 375°F (190°C).
- Rub the chicken breasts with olive oil, then season evenly with paprika, garlic powder, onion powder, salt, and black pepper.
2. Sear the Chicken
- Heat a large skillet over medium heat.
- Sear the chicken for 4–5 minutes per side, until golden brown (they don’t need to be fully cooked yet).
- Transfer the chicken to a baking dish.
3. Cook the Vegetables
- In the same skillet, melt butter.
- Add sliced mushrooms and onions, cooking for 4–5 minutes until softened and fragrant.
4. Add Broth
- Pour in chicken broth and let it simmer for 3–4 minutes, allowing the liquid to reduce slightly.
- Spoon the mushroom-onion mixture over the chicken in the baking dish.
5. Add Cheese and Bake
- Generously sprinkle shredded Monterey Jack cheese over the chicken.
- Bake uncovered for 15–18 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F / 74°C) and the cheese is melted and bubbly.
6. Garnish and Serve
- Sprinkle with fresh parsley if desired.
- Serve hot with mashed potatoes, green beans, or rice for a complete meal.
Notes
- For extra flavor, you can marinate the chicken in olive oil and spices for 30 minutes before cooking.
- Swap Monterey Jack with cheddar or pepper jack for a different flavor profile.
