Smothered Pork Chops with Potatoes in Gravy
Comfort food doesn’t get any better than this! Tender pork chops, soft potatoes, and a rich, golden gravy… this dish tastes like a warm hug on a plate. Perfect for busy nights, Sunday dinners, or when you just want REAL homemade flavor.
Ingredients
- 6 pork chops (bone-in or boneless, about 1 inch thick)
- 4 medium potatoes, peeled and cut into chunks
- 1 green bell pepper, diced (optional)
- 1 small onion, chopped
- 3 tablespoons olive oil or butter
- 2 tablespoons all-purpose flour
- 2 cups chicken broth
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- ½ teaspoon dried thyme
- Salt & pepper, to taste
Instructions
1. Season the pork chops
Pat the pork chops dry. Season both sides with:
salt, pepper, garlic powder, onion powder, and paprika.
2. Brown the chops
Heat oil/butter in a large skillet over medium-high heat.
Add the pork chops and sear for 3–4 minutes per side until golden brown.
Remove and set aside.
3. Sauté the veggies
In the same skillet, add the chopped onion and bell pepper.
Cook for 3–4 minutes until soft and fragrant.
4. Make the gravy
Sprinkle the flour over the veggies and stir well.
Cook for 1 minute.
Slowly pour in the chicken broth while whisking to avoid lumps.
Add thyme and adjust salt & pepper.
Let it simmer until slightly thickened.
5. Add potatoes + pork chops
Place the potato chunks into the skillet.
Nestle the pork chops on top.
6. Simmer & smother
Cover and cook on low heat for 35–45 minutes, or until:
- the pork chops are tender
- potatoes are soft
- gravy is rich and silky
(You can also bake everything at 375°F / 190°C for 45–55 minutes.)
