Ingredients:
*For the cake:*
– 1 1/2 cups ground almonds
– 1 cup powdered sugar
– 5 egg whites
– 5 whole eggs
– 1/3 cup all-purpose flour
– 1 tbsp cocoa powder
– 1/4 cup granulated sugar
– 1 tsp vanilla extract
– 1/4 cup melted butter
*For the cream:*
– 5 egg yolks
– 1/2 cup sugar
– 1/2 cup butter
– 1 tsp instant coffee
– 1/4 cup water
*For decoration:*
– 1 cup melted chocolate with a little oil
Instructions:
*To prepare the cake:*
1. Beat almonds, powdered sugar, whole eggs, and vanilla extract with an electric mixer for 3 minutes.
2. Add flour and cocoa powder, and mix gently with a wooden spoon.
3. Add melted butter and mix.
4. Beat egg whites and granulated sugar with an electric mixer for 5 minutes until stiff peaks form.
5. Fold egg whites into egg yolks mixture.
6. Pour batter into a 30×40 cm baking sheet lined with parchment paper.
7. Bake in a preheated oven at 200Β°C for 8 minutes.
8. Let cool, then cut into three equal pieces.
*To prepare the cream:*
1. Beat egg yolks and sugar with an electric mixer.
2. Add water and coffee, and mix.
3. Cook over low heat, stirring constantly, until mixture thickens.
*To assemble the cake:*
1. Place one cake layer on a serving plate.
2. Spread a layer of cream on top.
3. Repeat with remaining two cake layers.
4. Top with melted chocolate.
