Ingredients:
1 cup rolled oats
1/2 cup almond butter (or any nut butter of choice)
1/4 cup honey or maple syrup
1/2 cup cream cheese, softened
1/2 cup fresh blueberries
1/4 teaspoon vanilla extract
1/4 teaspoon salt
1/4 cup shredded coconut (optional)
1/4 cup chopped nuts (optional)
Directions:
1. In a large mixing bowl, combine the rolled oats, almond butter, honey or maple syrup, softened cream cheese, and vanilla extract. Stir well until all ingredients are evenly mixed together.
2. Gently fold in the fresh blueberries, being careful not to mash them. If using, also add the shredded coconut and chopped nuts at this stage to incorporate additional texture.
3. Once the mixture is well combined, cover the bowl with plastic wrap or a lid and refrigerate for about 30 minutes. This chilling time will help the mixture firm up, making it easier to shape into bites.
4. After the mixture has chilled, remove it from the refrigerator. Using your hands, scoop out about a tablespoon of the mixture and roll it into a ball. Repeat this process until all the mixture has been shaped into energy bites.
5. Place the formed energy bites on a baking sheet lined with parchment paper. If desired, roll the bites in additional shredded coconut or chopped nuts to enhance the texture and appearance.
6. Refrigerate the energy bites for another 30 minutes to set before serving. Store any leftovers in an airtight container in the refrigerator for up to one week.
