Lemon Blueberry Loaf

Ingredients

For the Loaf

  • 1 ½ cups all-purpose flour
  • 1 teaspoon baking powder
  • ½ teaspoon salt
  • ½ cup unsalted butter (softened)
  • ¾ cup granulated sugar
  • 2 large eggs
  • 2 tablespoons lemon zest
  • ¼ cup fresh lemon juice
  • ½ cup milk or Greek yogurt
  • 1 teaspoon vanilla extract
  • 1 cup fresh or frozen blueberries
  • 1 tablespoon flour (for coating blueberries)

For the Lemon Glaze

  • 1 cup powdered sugar
  • 2–3 tablespoons lemon juice

Instructions

  1. Preheat oven
Set oven to 350°F (175°C). Grease and line a loaf pan with parchment paper.
  2. Mix dry ingredients
In a bowl, whisk together flour, baking powder, and salt.
  3. Cream butter and sugar
In a separate bowl, beat butter and sugar until light and fluffy.
  4. Add eggs and flavoring
Mix in eggs one at a time. Add lemon zest, lemon juice, and vanilla extract.
  5. Combine wet and dry
Alternate adding dry ingredients and milk (or yogurt) into the batter. Mix until just combined.
  6. Prepare blueberries
Toss blueberries with 1 tablespoon flour (this helps prevent sinking), then gently fold into the batter.
  7. Bake
Pour batter into the loaf pan and smooth the top. Bake for 50–60 minutes, or until a toothpick inserted in the center comes out clean.
  8. Cool
Let the loaf cool in the pan for 10–15 minutes, then transfer to a wire rack.
  9. Make glaze
Mix powdered sugar with lemon juice until smooth.
  10. Glaze and serve
Drizzle glaze over the cooled loaf. Slice and enjoy!

Tips for Perfect Lemon Blueberry Loaf

  • Use room temperature ingredients for better mixing
  • Don’t overmix the batter—this keeps the loaf tender
  • If using frozen blueberries, don’t thaw them
  • Add extra lemon zest for a stronger citrus punch

Variations

  • Lemon Poppy Seed: Add 1 tablespoon poppy seeds
  • Healthier Option: Swap half the flour for whole wheat
  • Extra Rich: Use sour cream instead of milk

Storage

  • Refrigerate for up to 1 week
