Homemade Mexican Pizza (Long, Detailed, Perfect for Sharing!)

Ingredients

For the Beef Layer

  • 1 pound lean ground beef
  • 1 packet (1 ounce) taco seasoning
  • 1/2 cup water

For the Tortillas

  • 6 medium flour tortillas
  • Oil spray or 2 tablespoons vegetable oil (for crisping)

For the Bean & Sauce Layer

  • 1 can (16 ounces) refried beans
  • 1 can (10 ounces) red enchilada sauce or mild red taco sauce

Cheese & Toppings

  • 2 cups shredded Mexican cheese blend
  • 1/2 cup diced tomatoes
  • 1/4 cup sliced black olives (optional)
  • 1/4 cup diced green onions (optional)
  • Sour cream (optional for serving)

Instructions

1. Prepare the seasoned beef

  1. Place a skillet over medium-high heat.
  2. Add the ground beef and cook until fully browned, breaking it up with a spoon (about 6–7 minutes).
  3. Drain excess grease.
  4. Add the taco seasoning and 1/2 cup water.
  5. Stir and let it simmer for 3–4 minutes until thick and fragrant.
  6. Remove from heat and set aside.

2. Crisp the tortillas

To get that crispy Mexican-pizza shell:

Air Fryer Method (best texture)

  • Spray both sides of each tortilla lightly with oil.
  • Air fry at 400°F (200°C) for 3–4 minutes, flipping halfway, until golden and crispy.

Oven Method

  • Brush tortillas lightly with oil.
  • Bake at 400°F (200°C) for 5–7 minutes, flipping halfway.

Skillet Method

  • Heat 1 teaspoon oil in a pan.
  • Cook each tortilla 1–2 minutes per side until crispy.

Place them aside to cool and harden.

3. Warm the beans

  • Add the refried beans to a small pot.
  • Warm over low heat for 3–5 minutes, stirring occasionally to soften.
  • If they are too thick, add 1–2 tablespoons water.

4. Assemble the Mexican pizzas

You will make 3 full pizzas (each pizza uses 2 tortillas).

For each pizza:

  1. Place one crisp tortilla on a tray.
  2. Spread a generous layer of warm refried beans over the tortilla.
  3. Add a layer of seasoned beef.
  4. Place the second crisp tortilla on top to create the “pizza”.
  5. Spoon enchilada/red sauce over the top tortilla, spreading evenly.
  6. Add shredded Mexican cheese and top with a little sauce if desired.

Repeat for all pizzas.

5. Bake

  • Preheat oven to 400°F (200°C).
  • Place assembled pizzas on a baking sheet.
  • Bake for 8–10 minutes, or until the cheese is melted and bubbly.

6. Add fresh toppings

Sprinkle each pizza with:

  • Diced tomatoes
  • Black olives
  • Green onions

Optional: Add a dollop of sour cream when serving.

Serving

Slice each pizza into 4 wedges—like a personal pan pizza.
Serve hot with extra sauce or salsa.
