Ingredients
For the Garlic Butter Steak Bites
- 1 1/2 lbs sirloin steak, cut into bite-sized pieces
- Salt and pepper, to taste
- 2 tbsp olive oil
- 5 garlic cloves, minced
- 4 tbsp unsalted butter
- Fresh parsley, minced (for garnish)
For the Cheesy Smashed Potatoes
- 1 1/2 lbs baby potatoes
- 1/4 cup olive oil
- Salt and pepper, to taste
- 1 cup grated cheddar cheese
- 2 tbsp unsalted butter
- 2 minced garlic cloves
- Fresh chives, chopped (for garnish)
Directions
Step 1 — Prepare the Potatoes
- Preheat the oven to 425°F (220°C).
- Place the baby potatoes in a large pot and cover with water. Add a pinch of salt.
- Bring to a boil and cook until the potatoes are tender, about 15 minutes.
- Drain the potatoes and spread them on a baking sheet.
- Using the bottom of a glass or a potato masher, gently smash each potato until slightly flattened but still intact.
Step 2 — Make the Cheesy Smashed Potatoes
- Drizzle the potatoes generously with olive oil, then season with salt and pepper.
- Bake in the oven for 20 minutes, or until crispy and golden on the edges.
- Meanwhile, melt 2 tbsp butter in a small pan and sauté 2 minced garlic cloves for 1 minute.
- Remove the potatoes from the oven, brush them with the garlic butter, and sprinkle with the cheddar cheese.
- Return to the oven for 5–7 minutes, until the cheese is fully melted and bubbly.
- Garnish with chopped chives.
Step 3 — Cook the Steak Bites
- Pat the steak pieces dry with paper towels. This helps them sear properly.
- Season with salt and pepper.
- Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Add the steak bites in a single layer (cook in batches if necessary) and sear for 2–3 minutes per side, until browned and cooked to your liking. Remove the steak from the pan.
- In the same skillet, lower the heat and add 4 tbsp butter.
- Add the minced garlic and cook for 30 seconds until fragrant.
- Return the steak bites to the skillet and toss them in the garlic butter sauce.
- Garnish with fresh parsley.
Step 4 — Serve
Plate the cheesy smashed potatoes and top with the juicy garlic butter steak bites. Serve hot for the ultimate comforting meal!
