Fluffy Buttermilk Biscuits & Homemade Jelly

Ingredients
For the Biscuits
- 2 cups all-purpose flour
- 1 tablespoon baking powder
- ½ teaspoon baking soda
- 1 teaspoon salt
- 1 tablespoon sugar (optional, for a hint of sweetness)
- 6 tablespoons cold unsalted butter, cubed
- ¾–1 cup cold buttermilk
For Serving
- Butter (optional)
- Your favorite jelly or jam (strawberry, grape, peach, blackberry…)
How to Make the Fluffiest Buttermilk Biscuits
1. Prepare the Dough
- In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar.
- Add the cold butter cubes. Using your fingers or a pastry cutter, quickly rub the butter into the flour until the mixture looks like coarse crumbs.
Cold butter = flaky layers.
2. Add the Buttermilk
- Make a well in the center.
- Pour in ¾ cup cold buttermilk.
- Mix gently with a spoon until the dough just comes together.
- If the mixture is too dry, add an additional splash of buttermilk.
Do NOT overmix — this keeps your biscuits soft.
3. Shape the Dough
- Transfer the dough to a lightly floured surface.
- Pat it down into a rectangle, about 1 inch thick.
- Fold the dough into thirds like a letter — this creates layers.
- Gently pat down again and repeat the fold 1–2 more times.
4. Cut the Biscuits
- Use a round biscuit cutter or a cup.
- Press straight down — don’t twist.
- Place biscuits on a baking sheet, close together for taller sides or spaced apart for crispier edges.
5. Bake
- Preheat oven to 450°F (230°C).
- Brush the tops lightly with buttermilk for a golden crust.
- Bake for 12–15 minutes, until puffed and deeply golden.
Serve with Jelly
Once the biscuits come out of the oven:
- Split them open while warm
- Add a pat of butter
- Spread on your favorite homemade or store-bought jelly
