Classic scones

Ingredients

  • 2 cups (250 g) all-purpose flour
  • 1 tbsp baking powder
  • 2 tbsp sugar
  • ½ tsp salt
  • 6 tbsp cold unsalted butter (cubed)
  • ⅔ cup (160 ml) milk (plus extra for brushing)
  • 1 tsp vanilla extract (optional)
  • Optional add-ins: raisins, chocolate chips, or berries 
  • Instructions
  1. Preheat oven
    Set your oven to 400°F (200°C) and line a baking tray.
  2. Mix dry ingredients
    In a bowl, whisk together flour, baking powder, sugar, and salt.
  3. Add butter
    Rub the cold butter into the flour using your fingers until it looks like coarse crumbs.
  4. Add liquid
    Stir in the milk (and vanilla if using) until a soft dough forms. Don’t overmix.
  5. Shape the dough
    Turn onto a floured surface, gently knead once or twice, then pat into a 1-inch thick round.
  6. Cut scones
    Cut into wedges or use a round cutter.
  7. Brush & bake
    Brush tops with a little milk and bake for 12–15 minutes until golden.

Serving Ideas

  • Serve warm with butter, jam, or cream
  • Traditionally paired with tea (think of a classic British afternoon tea)

  • Keep butter cold—this makes them flaky
  • Don’t overwork the dough
  • Bake immediately after shaping
