Classic Apple Pie

Ingredients

For the crust:

  • 2 ½ cups all-purpose flour
  • 1 cup (225g) cold unsalted butter, cubed
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 6–8 tablespoons ice water

For the filling:

  • 6–7 medium apples (Granny Smith or Honeycrisp work best), peeled and sliced
  • ¾ cup sugar (adjust based on sweetness of apples)
  • 2 tablespoons flour or cornstarch
  • 1 teaspoon cinnamon
  • ¼ teaspoon nutmeg
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

  1. Prepare the dough
    In a bowl, mix flour, salt, and sugar. Cut in cold butter until mixture resembles coarse crumbs. Add ice water gradually until dough comes together. Divide into two discs, wrap, and chill for at least 1 hour.
  2. Make the filling
    In a large bowl, combine sliced apples, sugar, flour, cinnamon, nutmeg, lemon juice, vanilla, and salt. Toss well and let sit for 10–15 minutes.
  3. Roll out the crust
    Roll out one dough disc and place it into a 9-inch pie dish. Trim excess edges.
  4. Add filling
    Pour the apple mixture into the crust, spreading evenly.
  5. Top crust
    Roll out the second dough disc and place over the filling. Seal edges and cut slits on top to allow steam to escape.
  6. Bake
    Preheat oven to 200°C (400°F). Bake for 20 minutes, then reduce heat to 180°C (350°F) and bake for another 35–40 minutes until crust is golden brown and filling is bubbling.
  7. Cool before serving
    Let the pie cool for at least 2 hours to allow the filling to set.
