Cheesy Pizza-Style Beef Enchiladas
A comforting fusion dish that blends two classics—creamy, cheesy enchiladas and bold pizza flavors—into one irresistible, family-friendly meal. These enchiladas come loaded with seasoned beef, gooey cheese, pepperoni, and a rich pizza-enchilada sauce that makes every bite unforgettable.

For the Beef Filling
- 1 lb ground beef
- 1 cup diced yellow onion
- 2 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried basil
- ½ tsp paprika
- Salt and black pepper, to taste
- ½ cup pizza sauce
- ¼ cup enchilada sauce
- 1 tbsp olive oil
For the Sauce
- 1 cup pizza sauce
- ¾ cup red enchilada sauce
For Assembly
- 8–10 medium flour tortillas
- 2 cups shredded mozzarella cheese
- 1 cup shredded cheddar cheese
- Pepperoni slices (optional)
- Sliced black olives (optional)
- Fresh parsley or basil for garnish

1. Prepare the Beef Filling
- In a large skillet, heat olive oil over medium heat.
- Add the diced onion and cook for 3–4 minutes until soft and translucent.
- Add the ground beef, breaking it apart with a spoon. Cook until browned and no longer pink.
- Stir in the minced garlic and cook for 1 minute until fragrant.
- Season the beef with oregano, basil, paprika, salt, and black pepper. Mix well.
- Add ½ cup pizza sauce and ¼ cup enchilada sauce to the skillet.
- Stir everything together and let it simmer for 2–3 minutes to blend flavors.
- Turn off the heat and set the beef aside.
2. Make the Pizza-Enchilada Sauce
In a bowl, combine:
- 1 cup pizza sauce
- ¾ cup enchilada sauce
Stir until fully blended. This sauce gives the dish its signature pizza-meets-Mexican flavor.
3. Assemble the Enchiladas
- Warm each tortilla briefly so it becomes soft and easy to roll.
- Lay a tortilla flat and spoon a generous amount of the beef filling down the center.
- Sprinkle a small handful of mozzarella and cheddar on top of the beef.
- Add 2–3 slices of pepperoni inside if you want extra “pizza flavor.”
- Roll the tortilla tightly and place it seam-side-down in a lightly greased baking dish.
- Repeat with all remaining tortillas until the dish is full.
4. Add Sauce & Cheese
- Pour the pizza-enchilada sauce evenly over all the rolled tortillas.
- Sprinkle the remaining mozzarella and cheddar cheese generously over the top.
- Add a few pepperoni slices on top for decoration (optional but highly recommended).
- If using olives, sprinkle them across the cheese layer.
5. Bake
- Preheat your oven to 375°F (190°C).
- Bake the enchiladas for 20–25 minutes, or until the cheese is melted, bubbly, and lightly golden on top.
6. Serve
Remove from the oven and let it cool slightly.
Garnish with fresh parsley or basil for a bright, fresh finish.
