Candied Sweet Potato Rounds

Ingredients

  • 3–4 large sweet potatoes
  • 1/2 cup brown sugar
  • 1/4 cup granulated sugar
  • 1/4 cup unsalted butter (melted)
  • 1/2 cup water or orange juice
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg (optional)
  • Pinch of salt

Instructions

  1. Preheat oven to 180°C (350°F).
  2. Peel and slice sweet potatoes into even rounds (about 1–1.5 cm thick).
  3. Arrange slices in a single layer in a greased baking dish.
  4. In a bowl, mix:
    • Brown sugar
    • White sugar
    • Melted butter
    • Water or juice
    • Vanilla
    • Cinnamon, nutmeg, and salt
  5. Pour the mixture evenly over the sweet potatoes.
  6. Cover with foil and bake for 30 minutes.
  7. Remove foil, spoon sauce over the potatoes, and bake uncovered for another 20–30 minutes until tender and caramelized.
  8. Occasionally baste with the syrup for extra glaze.

Tips

  • For extra richness, add a splash of cream near the end.
  • Add marshmallows in the last 10 minutes for a dessert-style version.
  • A bit of orange zest gives a brighter flavor.
