Bang Bang Chicken Fried Rice
Crispy chicken, fluffy rice, and that sweet-spicy Bang Bang sauce all in one irresistible skillet.
Ingredients
For the Chicken
- 1½ lb boneless, skinless chicken breasts, cut into 1-inch cubes
- 1 tbsp vegetable oil
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp black pepper
- ½ tsp kosher salt
For the Fried Rice
- 2 tbsp sesame oil, divided
- 4 large eggs, beaten
- ½ tsp kosher salt
- 4 cups cooked rice (day-old, cold rice works best)
- 1 cup frozen peas & carrots (or mixed veggies)
- 3 green onions, sliced
- 2–3 tbsp soy sauce (adjust to taste)
Bang Bang Sauce
- ½ cup mayonnaise
- ¼ cup sweet chili sauce
- 1–2 tbsp sriracha (to taste)
- 1 tsp rice vinegar or lime juice
Instructions
- Make the Bang Bang Sauce
In a bowl, whisk mayonnaise, sweet chili sauce, sriracha, and vinegar until smooth. Set aside. - Cook the Eggs
Heat 1 tbsp sesame oil in a large skillet or wok over medium heat.
Add beaten eggs with ½ tsp salt. Scramble gently, then remove and set aside. - Cook the Chicken
In the same skillet, add vegetable oil.
Toss chicken with paprika, garlic powder, salt, and pepper.
Cook over medium-high heat 6–8 minutes until golden and cooked through. Remove and set aside. - Fry the Rice
Add remaining 1 tbsp sesame oil to the skillet.
Add rice and cook 2–3 minutes, breaking up clumps.
Stir in vegetables and soy sauce. Cook until hot and slightly crispy. - Combine Everything
Return chicken and eggs to the skillet.
Drizzle with Bang Bang sauce and toss until evenly coated and creamy. - Finish & Serve
Garnish with green onions. Serve hot.
Tips for Best Flavor
- Use cold rice for perfect fried rice texture.
- Add extra sriracha if you like it spicy.
- Swap chicken with shrimp for variation.
