Cheesy Garlic Butter Mushroom Stuffed Chicken 

This Cheesy Garlic Butter Mushroom Stuffed Chicken is juicy, rich, and packed with flavor. Tender chicken breasts are filled with a creamy mushroom–cheese mixture, then seared in garlic butter and baked to perfection. It’s an easy dinner that looks fancy but takes simple ingredients.

 Ingredients

For the Chicken

  • 4 boneless, skinless chicken breasts
  • Salt & black pepper, to taste
  • 1 teaspoon paprika
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil

For the Cheesy Mushroom Filling

  • 1 cup mushrooms, finely chopped
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • ½ cup cream cheese, softened
  • ½ cup shredded mozzarella cheese
  • 2 tablespoons grated Parmesan (optional but recommended)
  • Salt & pepper, to taste
  • 1 tablespoon fresh parsley, chopped (optional)

👩‍🍳 Instructions

1. Prepare the Chicken
Using a sharp knife, carefully cut a deep pocket into the side of each chicken breast (do not cut all the way through). Season the chicken inside and out with salt, pepper, paprika, and Italian seasoning. Set aside.

2. Cook the Mushrooms
In a skillet over medium heat, melt the butter. Add the chopped mushrooms and cook for 5–6 minutes until soft and all moisture evaporates. Add the minced garlic and cook for 30 seconds until fragrant.

3. Make the Filling
Remove the skillet from heat. Stir in the cream cheese, mozzarella, and Parmesan. Mix until creamy and smooth. Taste and adjust seasoning with salt and pepper. Add parsley if using.

4. Stuff the Chicken
Spoon the cheesy mushroom mixture into each chicken pocket. Secure with toothpicks if needed to prevent filling from leaking.

5. Sear the Chicken
Heat olive oil in an oven-safe skillet over medium-high heat. Sear the chicken for 3–4 minutes per side until golden brown.

6. Bake
Transfer the skillet to a preheated oven at 375°F (190°C). Bake for 15–20 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F / 74°C).

7. Rest & Serve
Let the chicken rest for 5 minutes before serving. Remove toothpicks and spoon any garlic butter sauce over the top.
