Strawberries and Cream Dream Layer Cheesecake Cake
Ingredients
Cheesecake Layer
- 24 oz cream cheese, softened (3 bricks)
- 1 cup granulated sugar
- 1 tbsp lemon juice
- 1 tsp vanilla extract
- 3 large eggs, room temperature
- ½ cup sour cream
- ¼ cup heavy cream
Vanilla Cake Layers
- 2½ cups all-purpose flour
- 2½ tsp baking powder
- ½ tsp salt
- ¾ cup unsalted butter, softened
- 1¾ cups granulated sugar
- 4 large eggs
- 1 tbsp vanilla extract
- 1 cup whole milk
Strawberry Filling
- 3 cups fresh strawberries, chopped
- ½ cup sugar
- 1 tbsp lemon juice
- 2 tsp cornstarch + 2 tbsp water
Cream Cheese Whipped Frosting
- 8 oz cream cheese, softened
- 1½ cups heavy whipping cream, cold
- ¾ cup powdered sugar
- 1 tsp vanilla extract
Garnish (Optional)
- Fresh strawberries
- Strawberry sauce or glaze
Instructions
1. Make the Cheesecake Layer
- Preheat oven to 325°F (160°C). Line a 9-inch springform pan with parchment.
- Beat cream cheese until smooth. Add sugar and mix well.
- Add lemon juice and vanilla, then eggs one at a time.
- Mix in sour cream and heavy cream.
- Pour into pan and bake 45–50 minutes until set but slightly jiggly.
- Cool completely, then chill at least 4 hours (or overnight).
2. Prepare the Vanilla Cake
- Increase oven to 350°F (175°C). Grease two 9-inch cake pans.
- Whisk flour, baking powder, and salt.
- Cream butter and sugar until light and fluffy.
- Add eggs one at a time, then vanilla.
- Alternate adding dry ingredients and milk.
- Divide batter and bake 25–30 minutes.
- Cool completely.
3. Strawberry Filling
- Cook strawberries, sugar, and lemon juice over medium heat.
- Add cornstarch slurry and cook until thick.
- Cool fully before assembling.
4. Whipped Cream Cheese Frosting
- Beat cream cheese until smooth.
- Add powdered sugar and vanilla.
- Slowly whip in cold cream until fluffy and stable.
Assembly
- Place one cake layer on a serving plate.
- Spread strawberry filling evenly.
- Carefully place cheesecake layer on top.
- Add remaining cake layer.
- Frost entire cake with whipped cream frosting.
- Chill 1–2 hours before slicing.

- Use room-temperature ingredients for a smooth cheesecake.
- Chill between layers for clean assembly.
- For higher visual appeal (CTR): decorate with halved strawberries and glaze.
