GARLIC CHICKEN LO MEIN (Full, Long Recipe )
A better-than-takeout Garlic Chicken Lo Mein loaded with savory garlic flavor, tender chicken, and perfectly saucy noodles. This recipe is great for dinner and reheats well.
Ingredients
For the Chicken:
- 2 boneless, skinless chicken breasts, cubed
- 1 tablespoon garlic powder
- Salt and black pepper, to taste
- 1 tablespoon fish sauce
- 1 teaspoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon cornstarch
- 1 tablespoon soy sauce
- 1 tablespoon vegetable oil
For the Lo Mein Sauce:
- ¼ cup low-sodium soy sauce
- 2 tablespoons oyster sauce
- 1 tablespoon hoisin sauce
- 1 tablespoon fish sauce
- 1 tablespoon brown sugar
- 1 teaspoon sesame oil
- ½ teaspoon black pepper
- ½ cup chicken broth or water
For the Noodles & Vegetables:
- 12 oz lo mein noodles (or spaghetti)
- 2 tablespoons vegetable oil
- 4–5 cloves garlic, minced
- 1 small onion, sliced
- 1 cup bell peppers, sliced
- 1 cup carrots, julienned
- 1 cup cabbage or bok choy, sliced
- 3 green onions, chopped
Instructions
1️⃣ Marinate the Chicken
In a bowl, combine chicken with garlic powder, salt, pepper, fish sauce, ginger, minced garlic, cornstarch, soy sauce, and oil.
Mix well and let marinate for 15–20 minutes.
2️⃣ Cook the Noodles
Bring a large pot of salted water to a boil.
Cook noodles according to package instructions until al dente.
Drain and toss lightly with a few drops of oil to prevent sticking. Set aside.
3️⃣ Prepare the Sauce
In a small bowl, whisk together all sauce ingredients.
Taste and adjust salt or sweetness if needed. Set aside.
4️⃣ Cook the Chicken
Heat a large wok or skillet over medium-high heat.
Add 1 tablespoon oil.
Add chicken in a single layer and cook 3–4 minutes per side until golden and cooked through.
Remove chicken and set aside.
5️⃣ Stir-Fry the Vegetables
In the same pan, add remaining oil.
Add garlic and onions; sauté 30 seconds until fragrant.
Add carrots, bell peppers, and cabbage. Stir-fry 2–3 minutes until slightly tender but crisp.
6️⃣ Combine Everything
Return chicken to the pan.
Add cooked noodles.
Pour sauce over everything and toss well to coat evenly.
Cook for 2–3 minutes, tossing constantly, until noodles absorb the sauce.
7️⃣ Finish & Serve
Add green onions and toss one last time.
Remove from heat and serve hot.

- Use fresh garlic generously for strong garlic taste
- Don’t overcook noodles — they should stay chewy
- Add chili oil or chili flakes if you like heat
- A splash of noodle water helps loosen the sauce if needed
