Crispy Chicken Fritters (Super Tender & Golden Crunch)

A comfort-food classic that gives you juicy chicken on the inside and a crispy, golden crust on the outside. These fritters are easy, budget-friendly, and perfect for weeknight dinners, parties, or dipping platters.

For the Chicken Fritters

  • 2 cups cooked chicken, shredded or finely chopped
  • 2 large eggs
  • ½ cup all-purpose flour
  • ½ cup shredded mozzarella cheese
  • ½ cup mayonnaise
  • 2 tablespoons cornstarch
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • ½ teaspoon dried oregano
  • ½ teaspoon salt (or to taste)
  • ½ teaspoon black pepper
  • 2 tablespoons chopped parsley or green onions

For Frying

  • Oil for shallow frying (vegetable, canola, or sunflower)

1. Prepare the Chicken Mixture

In a large mixing bowl, add the shredded chicken. The smaller the pieces, the softer and crispier the fritters will be.

Add the eggs, mayonnaise, and mozzarella cheese. Mix well until the chicken is fully coated and the mixture becomes thick and sticky.

Add flour and cornstarch. These help the fritters hold their shape and get crispy.

Season with garlic powder, onion powder, paprika, oregano, salt, pepper, and parsley.
Mix again until everything is combined and the batter looks uniform.

Cover and chill for 15–20 minutes — this step makes the fritters crispier.

2. Heat the Oil

Pour ½ inch of oil into a large skillet.
Heat over medium until shimmering.
If a small piece of batter sizzles immediately, it’s ready.

3. Form and Fry the Fritters

Use a spoon or ice-cream scoop to scoop portions of the chicken mixture.
Gently flatten with the back of the spoon to form round fritters.

Place them carefully into the hot oil.

Fry for 3–4 minutes per side, or until they turn deep golden and crispy.

Do not overcrowd the pan — this keeps the oil hot and the fritters crunchy.

Transfer cooked fritters to a paper-towel-lined plate to remove excess oil.

4. Serve Hot

Crispy chicken fritters are best served immediately while the edges are still crunchy.
