A rich, flavorful, crowd-pleasing taco-inspired dish made in one skillet! Packed with seasoned ground beef, Rotel, corn, and warm spices — this recipe transforms simple ingredients into a cozy, satisfying dinner with almost no cleanup.

Ingredients

  • 1 lb ground beef
  • 1 packet taco seasoning
  • ½ cup water
  • 1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
  • 1 (15 oz) can corn, drained

  • 1 cup cooked rice or Mexican rice
  • 1 cup black beans, drained
  • 1–2 cups shredded cheddar or Mexican blend cheese
  • 1 small onion, diced
  • 1 tbsp olive oil
  • Fresh cilantro for garnish

1. Brown the Beef to Build Flavor

Place a large skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon.
Cook until the meat is no longer pink and begins to develop a slightly browned, caramelized color — this step adds a deep, savory flavor.

2. Remove Excess Grease

Drain any excess fat from the skillet to prevent the dish from becoming greasy. Return the skillet to the stove.

3. Add Taco Seasoning + Water

Pour in the drained Rotel and drained corn.
