Juicy pan-seared chicken breasts drenched in a rich garlic broth sauce and smothered with melty Jack cheese — this dish delivers that restaurant-style flavor right at home. It’s simple, comforting, and absolutely irresistible!
Ingredients
- 3–4 chicken breasts
- 1 cup shredded Jack cheese (Monterey Jack or Pepper Jack)
- 2 tablespoons olive oil
- 2–3 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 tablespoon butter
- 1 small onion, thinly sliced
- 1 bell pepper, thinly sliced (optional but recommended)
- 1 teaspoon paprika
- 1 teaspoon onion powder
- Salt & black pepper, to taste
- Fresh parsley for garnish
Instructions (Long + Detailed)
1. Prepare the Chicken
- Pat the chicken breasts dry with paper towels — this helps them brown beautifully.
- Season both sides generously with salt, pepper, paprika, and onion powder.
- If the breasts are thick, lightly pound them to an even thickness so they cook evenly.
2. Sear the Chicken
- Heat 2 tbsp olive oil in a large skillet over medium-high heat.
- Add the chicken and sear for 5–6 minutes per side, until golden brown.
- Remove chicken to a plate and set aside (it will finish cooking in the sauce).
3. Cook the Onions & Garlic
- In the same pan, add a small piece of butter.
- Add the sliced onion (and bell pepper if using).
- Sauté until soft, sweet, and lightly caramelized — about 6–8 minutes.
- Add the minced garlic and stir for 30 seconds until fragrant.
4. Make the Sauce
- Pour in 1 cup chicken broth, scraping up the browned bits from the bottom (this adds huge flavor!).
- Bring to a gentle simmer for 2–3 minutes.
5. Smother the Chicken
- Return the chicken breasts to the skillet.
- Spoon some of the onion-garlic broth over the top.
- Cover the pan and let it simmer for 8–10 minutes, until the chicken is fully cooked and tender.
6. Add the Jack Cheese
- Once the chicken is done, sprinkle each breast generously with shredded Jack cheese.
- Cover again for 2–3 minutes, just until the cheese melts into a gooey blanket of goodness.
7. Final Touch
- Garnish with fresh parsley.
- Serve hot with mashed potatoes, rice, or buttered noodles.
