Chocolate Mayonnaise Cake (Super Moist & Rich)
This classic cake is unbelievably soft, fudgy, and moist — all thanks to a secret ingredient: mayonnaise! It replaces the eggs and oil, giving you a perfectly tender crumb. One bite and you’ll understand why this recipe has been passed down for generations.
Ingredients
Dry Ingredients
- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 tsp baking soda
- ½ cup unsweetened cocoa powder
- ½ tsp salt
Wet Ingredients
- 1 cup mayonnaise (full-fat gives best texture)
- 1 cup water
- 1 tsp vanilla extract
Instructions (Long & Detailed)
1. Prepare your pan
Grease and flour a 9×13-inch baking dish, or line it with parchment paper.
Preheat oven to 350°F (175°C).
2. Mix the dry ingredients
In a large bowl, whisk together:
- flour
- sugar
- cocoa powder
- baking soda
- salt
Make sure everything is well combined and lump-free. This ensures even rising and a smooth batter.
3. Add the wet ingredients
Add the mayonnaise, water, and vanilla extract directly into the dry mixture.
4. Mix the batter
Using a whisk or a hand mixer, mix until the batter becomes smooth.
Don’t overmix — just blend until no dry flour remains.
The batter will be slightly thick and very chocolatey.
5. Bake
Pour the batter into your prepared pan and smooth the top.
Bake for 28–35 minutes, or until a toothpick inserted in the center comes out clean.
6. Cool completely
Let the cake cool in the pan before frosting.
Cooling helps the cake set and stay ultra-moist.
