Ingredients

  • 2 slices bacon
  • 2 slices bread (white, sourdough, or your favorite)
  • 1 tablespoon unsalted butter
  • 4 slices dill pickles
  • 2 slices Swiss cheese
  • 2 slices cheddar cheese

Instructions

1. Cook the Bacon

Start by heating a skillet over medium heat.
Add your bacon strips and cook them slowly until they turn beautifully golden and crispy.
Once cooked, transfer them to a paper towel–lined plate to drain any excess grease.
Crispy bacon is key for texture — don’t rush this step!

2. Prepare the Bread

Spread the butter evenly on one side of each bread slice.
This buttered side will go on the outside to create that beautiful golden crust when grilled.

Flip the bread so the un-buttered sides are facing up.
These will be the inside of your sandwich where the cheesy magic happens.

3. Add the Cheese Layers

On one slice of bread (un-buttered side), place:

  • 1 slice of Swiss cheese
  • 1 slice of cheddar cheese

Cheese is the “glue” of this melt, so stacking both gives a perfect balance:
Swiss for meltability + cheddar for sharp flavor.

4. Add the Bacon & Pickles

Lay the crispy bacon strips evenly over the cheese.
Then add your dill pickle slices — their tangy crunch cuts through the richness and transforms the whole sandwich.
If you LOVE pickles, feel free to add extra!

5. Top & Grill

Place the second slice of bread on top, buttered side facing outward.

Heat a non-stick skillet over medium heat.
Carefully place the sandwich in the pan and cook for 2–3 minutes per side, pressing gently with a spatula.
You’re aiming for:

  • Golden, crisp bread
  • Gooey, fully melted cheese
  • Warm pickles and smoky bacon

Flip once, and cook the other side until equally golden.
