Sizzling Texas-style chicken, smothered in mushrooms, onions, and melted Monterey Jack cheese – a hearty dish that’s perfect for dinner any night of the week.

Ingredients (Serves 4)

  • 4 boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • 1 cup fresh mushrooms, sliced
  • 1 small onion, thinly sliced
  • 1 tablespoon butter
  • ½ cup chicken broth
  • 1 cup shredded Monterey Jack cheese
  • 2 tablespoons fresh parsley, chopped (optional, for garnish)

Instructions

1. Prepare the Chicken

  1. Preheat your oven to 375°F (190°C).
  2. Rub the chicken breasts with olive oil, then season evenly with paprika, garlic powder, onion powder, salt, and black pepper.

2. Sear the Chicken

  1. Heat a large skillet over medium heat.
  2. Sear the chicken for 4–5 minutes per side, until golden brown (they don’t need to be fully cooked yet).
  3. Transfer the chicken to a baking dish.

3. Cook the Vegetables

  1. In the same skillet, melt butter.
  2. Add sliced mushrooms and onions, cooking for 4–5 minutes until softened and fragrant.

4. Add Broth

  1. Pour in chicken broth and let it simmer for 3–4 minutes, allowing the liquid to reduce slightly.
  2. Spoon the mushroom-onion mixture over the chicken in the baking dish.

5. Add Cheese and Bake

  1. Generously sprinkle shredded Monterey Jack cheese over the chicken.
  2. Bake uncovered for 15–18 minutes, or until the chicken is fully cooked (internal temperature should reach 165°F / 74°C) and the cheese is melted and bubbly.

6. Garnish and Serve

  1. Sprinkle with fresh parsley if desired.
  2. Serve hot with mashed potatoes, green beans, or rice for a complete meal.

Notes

  • For extra flavor, you can marinate the chicken in olive oil and spices for 30 minutes before cooking.
  • Swap Monterey Jack with cheddar or pepper jack for a different flavor profile.
  • Leftovers store well in the fridge for up to 3 days. Reheat in the oven to keep the cheese melty.
