Creamed Chipped Beef on Toast – Classic Comfort Food
This is a nostalgic dish that many people grew up eating, especially during breakfast or brunch. It’s creamy, salty, and full of rich flavors, perfect for a cozy morning.
Ingredients
- 8 oz dried beef, chopped into small pieces
(If it’s very salty, rinse briefly in cold water and pat dry) - 2 tbsp unsalted butter
- 2 tbsp all-purpose flour
- 1 cup milk
- 1/2 cup heavy whipping cream
- Black pepper, to taste
- Toasted bread slices, for serving
Instructions
1. Prepare the Beef
Take your dried beef and chop it into bite-sized pieces. If it tastes too salty, rinse it quickly under cold water and pat it dry using a paper towel. This will reduce the saltiness without losing the flavor.
2. Make the Roux (Base for the Sauce)
In a medium skillet or frying pan, melt 2 tablespoons of butter over medium heat. Once the butter is melted and bubbly, sprinkle in the flour. Whisk constantly for 1–2 minutes until the mixture turns slightly golden and gives off a nutty aroma. This is the base that will thicken your sauce.
3. Add the Dairy
Slowly pour in the milk and heavy cream while whisking constantly to prevent lumps. Keep stirring until the mixture becomes smooth and creamy. Let it simmer gently for 5–7 minutes. The sauce should thicken and coat the back of a spoon.
4. Season and Add the Beef
Add black pepper to taste. Then fold in the chopped dried beef. Let the beef heat through in the sauce for 2–3 minutes. Taste and adjust seasoning if needed.
5. Toast the Bread
While your sauce simmers, toast your bread slices until they are golden brown and slightly crisp. This will give a nice texture contrast to the creamy beef sauce.
6. Serve
Place the toasted bread on plates and spoon a generous amount of the creamed beef over each slice. Sprinkle extra black pepper on top if desired. Serve immediately while warm.
This dish is perfect for a comforting breakfast, brunch, or even a simple dinner. The creamy, salty sauce pairs beautifully with the crunchy toast, and it’s a meal that brings nostalgia and warmth in every bite.
