Honey Lime Chicken & Rice Bowls

Ingredients

For the Chicken

 

1 ½ lbs chicken breasts, cut into bite-sized pieces

 

2 tbsp olive oil

 

3 tbsp honey

 

Juice & zest of 2 limes

 

3 garlic cloves, minced

 

1 tsp chili powder

 

½ tsp paprika

 

½ tsp salt

 

¼ tsp black pepper

 

For the Rice Bowl

 

2 cups cooked jasmine or basmati rice

 

1 cup corn (fresh, frozen, or roasted)

 

1 cup black beans, drained & rinsed

 

1 red bell pepper, diced

 

1 avocado, sliced

 

¼ cup chopped cilantro

 

Lime wedges, for serving

 

Optional Add-Ons

 

Sour cream or Greek yogurt

 

Sliced jalapeños

 

Extra honey-lime drizzle

 

Directions

 

In a bowl, whisk honey, lime juice, lime zest, garlic, chili powder, paprika, salt, and pepper.

 

Add chicken and marinate 15–30 minutes (or up to 4 hours).

 

Heat olive oil in a skillet over medium-high heat.

 

Add chicken and cook 6–8 minutes until golden and cooked through; allow marinade to reduce into a sticky glaze.

 

Divide rice into serving bowls.

 

Top with corn, black beans, bell pepper, avocado, and honey-lime chicken.

 

Sprinkle cilantro on top and serve with lime wedges.

 

Add optional toppings as desired.
