Ingredients:
- 12 oz pasta (rigatoni or your favorite shape)
- 1 lb ground beef
- 1 can (10 oz) Rotel tomatoes (diced tomatoes with green chilies)
- 8 oz Velveeta cheese, cubed
- 1 cup heavy cream or milk
- 1/2 cup shredded cheddar cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon paprika
- Salt & pepper to taste
- Fresh parsley (for garnish)
Instructions:
1️⃣ Cook the Pasta:
- Bring a large pot of salted water to a boil. Cook the pasta according to the package instructions until al dente. Drain and set aside.
2️⃣ Cook the Ground Beef:
- In a large skillet, brown the ground beef over medium heat, breaking it up as it cooks. Once fully cooked, drain any excess fat.
3️⃣ Make the Cheese Sauce:
- Add the Rotel tomatoes (with their juice) to the skillet with the beef.
- Stir in the cubed Velveeta cheese and cook over medium heat, stirring frequently, until the cheese is fully melted and the mixture is creamy.
- Add the heavy cream (or milk), garlic powder, onion powder, paprika, salt, and pepper. Stir until everything is well combined and heated through.
4️⃣ Combine Pasta and Sauce:
- Add the cooked pasta to the skillet with the cheese sauce and toss to coat the pasta evenly in the creamy sauce.
5️⃣ Add the Cheddar:
- Stir in the shredded cheddar cheese and continue cooking until melted and smooth.
6️⃣ Serve:
- Serve the pasta hot, garnished with fresh parsley for a burst of color and flavor.
