- 2 cups cooked rice (preferably day-old, chilled)
- 200g beef (thinly sliced)
- 1/2 onion (finely chopped)
- 2 cloves garlic (minced)
- 1/2 cup mushrooms (chopped)
- 1/3 cup peas
- 2 eggs (lightly beaten)
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1/2 tbsp sesame oil
- 1/2 tsp black pepper
- 1 tbsp vegetable oil (for stir-frying)

Instructions:
1️⃣ Prepare the Ingredients:
- Make sure the rice is chilled and preferably a day old for the best texture.
- Slice the beef thinly and chop the onion, garlic, mushrooms, and peas.
2️⃣ Stir-Fry the Beef:
- Heat a wok or large skillet over medium-high heat and add 1 tablespoon of vegetable oil.
- Add the sliced beef and stir-fry for about 2-3 minutes until it’s browned and cooked through. Remove the beef from the pan and set aside.
3️⃣ Cook the Veggies:
- In the same pan, add a little more oil if needed and stir-fry the chopped onions, garlic, and mushrooms for 2-3 minutes until they’re softened and fragrant.
- Add the peas and cook for another minute.
4️⃣ Scramble the Eggs:
- Push the veggies to one side of the pan and pour the beaten eggs into the empty space.
- Scramble the eggs until fully cooked, then mix them with the veggies.
5️⃣ Fry the Rice:
- Add the chilled rice to the pan and break it up, stirring it into the veggie and egg mixture.
- Pour in the soy sauce, oyster sauce, sesame oil, and black pepper. Stir-fry everything together until well combined and the rice is heated through.
6️⃣ Add the Beef:
- Add the cooked beef back into the pan and toss everything together until the beef is evenly mixed through the rice.
7️⃣ Garnish & Serve:
- Garnish with fresh herbs or scallions for an extra burst of flavor.
