1. Prep the roast
Pat the pork crown roast dry with paper towels. Season all over with salt and black pepper.
2. Make the glaze
In a small bowl, whisk together apple cider, Dijon mustard, honey, and minced garlic.
3. Set up the slow cooker
Place the pork crown roast into the slow cooker, bone-side up if possible (it may need a slight angle depending on size).
Pour the glaze evenly over the roast, making sure it coats the top and sides.
4. Cook low and slow
Cover and cook:
- On LOW for 5β7 hours (best for tenderness)
- Or HIGH for 3β4 hours
The pork is ready when it reaches an internal temperature of 145Β°F (63Β°C) and is tender.

Carefully transfer the roast to a baking dish and brush with extra glaze from the slow cooker.
Broil in the oven for 3β5 minutes until lightly caramelized.
