- 2 cups green peas (fresh or frozen)
- 2 tbsp butter
- 2 tbsp all-purpose flour
- 1Β½ cups milk (warm)
- Salt and black pepper, to taste
- Pinch of sugar (optional, balances flavor)
- 4 slices toasted bread
- Optional: pinch of nutmeg, chopped parsley, or grated cheese

- Cook the peas
- If using fresh peas: boil in salted water for 3β5 minutes until tender.
- If using frozen peas: cook according to package instructions.
Drain and set aside.
- Make the cream sauce (roux base)
- In a saucepan, melt the butter over medium heat.
- Stir in the flour and cook for about 1β2 minutes (donβt let it brown).
- Gradually whisk in the warm milk, stirring constantly to avoid lumps.
- Thicken the sauce
Continue stirring until the sauce thickens to a smooth, creamy consistency (about 3β5 minutes). - Add peas & season
Stir in the cooked peas. Add salt, pepper, and a pinch of sugar if desired.
Optional: a tiny pinch of nutmeg adds a classic touch. - Prepare the toast
Toast the bread slices until golden and crisp. - Assemble
Spoon the creamy peas generously over the toast.
