Creamed Peas on Toast

Ingredients

  • 2 cups green peas (fresh or frozen)
  • 2 tbsp butter
  • 2 tbsp all-purpose flour
  • 1Β½ cups milk (warm)
  • Salt and black pepper, to taste
  • Pinch of sugar (optional, balances flavor)
  • 4 slices toasted bread
  • Optional: pinch of nutmeg, chopped parsley, or grated cheese

  1. Cook the peas
    • If using fresh peas: boil in salted water for 3–5 minutes until tender.
    • If using frozen peas: cook according to package instructions.
      Drain and set aside.
  2. Make the cream sauce (roux base)
    • In a saucepan, melt the butter over medium heat.
    • Stir in the flour and cook for about 1–2 minutes (don’t let it brown).
    • Gradually whisk in the warm milk, stirring constantly to avoid lumps.
  3. Thicken the sauce
    Continue stirring until the sauce thickens to a smooth, creamy consistency (about 3–5 minutes).
  4. Add peas & season
    Stir in the cooked peas. Add salt, pepper, and a pinch of sugar if desired.
    Optional: a tiny pinch of nutmeg adds a classic touch.
  5. Prepare the toast
    Toast the bread slices until golden and crisp.
  6. Assemble
    Spoon the creamy peas generously over the toast.
