Slow Cooker Sausage, Potatoes & Bacon

Ingredients:

  • 1 lb (450 g) smoked or fresh sausage links
  • 4–5 medium potatoes, peeled and diced
  • 1 small onion, chopped
  • 5–6 slices bacon, cooked and crumbled
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 tbsp olive oil (for browning)
  • Salt & black pepper, to taste
  • ½ tsp dried thyme (optional)
  • ½ tsp paprika (optional)

Instructions:

  1. Brown the sausage (recommended)
    In a skillet over medium heat, add olive oil and brown the sausage on all sides (about 5–7 minutes). This adds extra flavor.
  2. Cook the bacon
    Cook bacon until crispy, then crumble and set aside.
  3. Layer in slow cooker
    Add diced potatoes, onion, garlic, and most of the bacon to the slow cooker.
  4. Add sausage
    Place browned sausages on top.
  5. Season & add liquid
    Sprinkle with salt, pepper, thyme, and paprika. Pour in the chicken broth.
  6. Cook
    • LOW: 6–7 hours
    • HIGH: 3–4 hours
      Until potatoes are tender and sausage is cooked through.
  7. Finish & serve
    Sprinkle remaining bacon on top before serving.

Optional Add-Ins:

  • Shredded cheese at the end 🧀
  • A splash of cream for richness
  • Green beans or carrots for extra veggies
