- 2 lbs baby potatoes (halved if large)
- 4 tbsp butter (melted)
- 1 packet onion soup mix (about 1 oz)
- 2 tbsp olive oil

- Prep the potatoes
Wash and dry the baby potatoes. If theyβre large, cut them in halves or quarters. - Mix everything
Place potatoes in the slow cooker. Pour over melted butter and olive oil, then sprinkle the onion soup mix evenly. - Toss to coat
Stir well so all the potatoes are coated with the buttery seasoning. - Cook
Cover and cook on:- Low for 6β7 hours, or
- High for 3β4 hours
until potatoes are tender.
- Finish & serve
Give a final stir before serving. Optional: garnish with chopped parsley for freshness.
