Best Carrot Cake Ever

Ingredients

For the Cake:

  • 2 cups (250g) all-purpose flour
  • 2 teaspoons baking powder
  • 1 ½ teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon salt
  • 1 cup (200g) granulated sugar
  • 1 cup (220g) brown sugar
  • 1 cup (240ml) vegetable oil
  • 4 large eggs
  • 2 teaspoons vanilla extract
  • 3 cups (300g) finely grated carrots
  • 1 cup (120g) chopped walnuts or pecans (optional)
  • ½ cup (80g) crushed pineapple, drained (optional, for extra moisture)

For the Cream Cheese Frosting:

  • 8 oz (225g) cream cheese, softened
  • ½ cup (115g) unsalted butter, softened
  • 3–4 cups (360–480g) powdered sugar
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions

Step 1: Prepare the Oven and Pans

Preheat your oven to 350°F (175°C). Grease and line two 9-inch round cake pans.

Step 2: Mix Dry Ingredients

In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

Step 3: Combine Wet Ingredients

In another bowl, beat together sugars and oil until smooth. Add eggs one at a time, mixing well after each. Stir in vanilla extract.

Step 4: Bring It Together

Gradually add the dry ingredients to the wet mixture. Mix until just combined—do not overmix.

Step 5: Add Carrots and Extras

Fold in grated carrots, nuts, and pineapple if using.

Step 6: Bake

Divide batter evenly between pans. Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.

Step 7: Cool Completely

Allow cakes to cool in pans for 10 minutes, then transfer to a wire rack to cool completely.

Make the Frosting

Beat cream cheese and butter together until smooth and creamy. Gradually add powdered sugar until you reach your desired sweetness and consistency. Mix in vanilla and a pinch of salt.

Assemble the Cake

  • Place one cake layer on a serving plate
  • Spread a thick layer of frosting on top
  • Add the second layer
  • Frost the top and sides evenly

Optional: Garnish with chopped nuts or carrot decorations.

Tips for the Best Results

  • Use fresh carrots — pre-shredded ones are too dry
  • Don’t skip the salt — it enhances all the flavors
  • Chill before slicing — this helps the frosting set beautifully
  • Make it ahead — carrot cake tastes even better the next day

Final Thoughts

The best carrot cake isn’t just about sweetness—it’s about harmony. Moist crumb, gentle spice, and creamy frosting all come together to create something truly memorable. Whether for a celebration or a simple treat, this recipe delivers every single time.
