Cheesy Taco Skillet Bake (Family-Style One-Pan Dinner)
A rich, flavorful, crowd-pleasing taco-inspired dish made in one skillet! Packed with seasoned ground beef, Rotel, corn, and warm spices — this recipe transforms simple ingredients into a cozy, satisfying dinner with almost no cleanup.
Ingredients
- 1 lb ground beef
- 1 packet taco seasoning
- ½ cup water
- 1 (10 oz) can Rotel (diced tomatoes & green chilies), drained
- 1 (15 oz) can corn, drained
Optional Add-ins for richer flavor:
- 1 cup cooked rice or Mexican rice
- 1 cup black beans, drained
- 1–2 cups shredded cheddar or Mexican blend cheese
- 1 small onion, diced
- 1 tbsp olive oil
- Fresh cilantro for garnish
Instructions (Long & Detailed)
1. Brown the Beef to Build Flavor
Place a large skillet over medium heat. Add the ground beef and cook for 6–8 minutes, breaking it apart with a wooden spoon.
Cook until the meat is no longer pink and begins to develop a slightly browned, caramelized color — this step adds a deep, savory flavor.
2. Remove Excess Grease
Drain any excess fat from the skillet to prevent the dish from becoming greasy. Return the skillet to the stove.
3. Add Taco Seasoning + Water
Sprinkle the taco seasoning evenly over the beef.
Pour in the ½ cup of water and stir well until the seasoning coats every piece of meat.
Simmer for 2–3 minutes until the liquid thickens into a flavorful sauce.
4. Add the Rotel & Corn
Pour in the drained Rotel and drained corn.
Stir until well combined — the tomatoes, chilies, and sweet corn balance the spiciness of the seasoning, giving the dish a Tex-Mex flavor profile.
5. Optional: Make It a Hearty Meal
If you want to bulk up the dish, add:
- Cooked rice (for a filling skillet bowl)
- Black beans
Mix until everything is evenly distributed.
6. Optional: Turn It Into a Cheesy Bake
If you want a cheesy skillet bake:
- Top the mixture with 1–2 cups shredded cheese
- Cover the skillet with a lid
- Lower the heat and let it melt for 3–4 minutes
OR place the skillet under the broiler for 2 minutes for a bubbly, golden top.
7. Serve Hot
Remove from heat and garnish with cilantro, sliced jalapeños, or sour cream.
